I mentioned previously that two of my sons got married in February 2012. Both couples are young and have learned and grown so much over the past year. Noah and Steph celebrated their one year anniversary this past weekend. Kayleb and Nikki will celebrate theirs next weekend. I am so proud of my sons for many reasons – one of which is the wonderful job that they done in picking their partner.
Both of these ladies are amazing and I am proud to call them my daughters. It’s a bitter sweet moment when a mother “gives” her sons to another woman. Someone else who will take over where you left off when it comes to caring for them, cooking for them, cleaning up after them (okay this part I was ecstatic about!) and helping them to make their life decisions. I can honestly say that both of these girls made it so easy for me to let go of my sons and know that they will be a part of a wonderful partnership for life!
I have two recipes for you this week – make sure you look for the second post for a delicious Jambalaya recipe! This first post is a chili recipe that my daughter Nikki was given by her Grandma Carol.
Everyone was RAVING about how good it was! I hope you enjoy it too.
2 pounds ground beef
2 tsp. garlic
3 cups salsa (store bought or homemade)
1 can diced tomatoes
2 cans kidney beans (optional – Nikki does not use these but her grandma does )
Crackers – round snack cracker any variety or flavor
Brown the ground beef and onions then drain. Drain the beans if you are using them. Pour all ingredients into the crockpot and cook on low for 6 hours. You can also cook on hi for about 2 – 3 hours if you prefer.
Serve this with crackers for dipping or just a spoon if you prefer.
