Today I have the most delicious Slow Cooker Pepper Steak recipe to share with you! Believe me it is lick your lips delicious!
Joe and I are getting to the age where all of our children are growing up and beginning their own lives and in their own places. This week was bittersweet because Noah, Steph & Monkey (Isaiah) moved into their own apartment. Of course we’re very proud of them because they are growing and doing a great job of providing for their family so that’s the sweet, obviously. : ) Then there’s the bitter.. as a mom it’s always hard to see your children grow up and move out. As much as you want them to do well it is a difficult transition. This time it’s made even more difficult by not seeing Monkey every day. As with all transitions I’m sure it will get easier and feel normal in time but for now it just feels like something is missing.
Aren’t they an adorable family? Our extremely talented daughter, Lacy, took this picture by the way. She’s pretty awesome also. Heck we just have pretty awesome kids.. every single one of them! Enough about us and onto this weeks Crockpot Wednesday Recipe – Slow Cooker Pepper Steak.

This was my husbands favorite crockpot recipe since we started our venture into crockpot cooking a few months ago. I have to agree it was really good but my favorite is one of the others I’ll be sharing with you tonight – Polynesian Chicken… YUM!
4 lbs. round steak, cut into 1 inch strips
2 tsp. garlic powder
2 beef bouillon cubes
1/2 cup hot water
2 Tablespoons cornstarch
29 oz. whole tomatoes – chopped
6 Tablespoons soy sauce
2 teaspoons sugar
2 teaspoons salt
4 large green peppers – sliced in strips
2 large red peppers – sliced in strips
non stick cooking spray
4 cups uncooked white rice
You will need to use a 5 or 6 quart slow cooker for this recipe unless you decide to half it.
Spray slow cooker with cooking spray. Place beef strips in bottom of crockpot and cover with garlic powder. Mix bouillon cubes and hot water until dissolved, add cornstarch and stir until mixed completely. Pour over the beef strips. Add tomatoes, soy sauce, sugar and salt. Cover and cook on low for 6 to 8 hours.
For the last half hour of cooking add the sliced peppers and turn heat up to high.
While the peppers are cooking – cook rice according to package directions.
Serve pepper steak over rice and enjoy!
