Today I have Low-Carb Monster Fingers for you.  This recipe is SO SIMPLE that it almost feels wrong to even call it a recipe.  They make a great snack for the kids or an appetizer for a party.

Low-Carb Monster Fingers

1 Package Chipped Beef
Dill Pickle Spears – about 6 – cut into halves length wise
1 8 oz. block cream cheese
1/3 cup diced green onions

Mix cream cheese until fluffy – I use my stand mixer for this but you could use a hand mixer also.
Add diced green onions to cream cheese and mix.
To assemble, spread a thin layer of cream cheese mixture on one slice of beef, lay a pickle spear on top and roll the beef up around the pickle.

That’s IT!  Can you believe how simple this is?
