Taco Stuffed Avocado with Avocado Salsa

I’m so excited to be participating in the Eat Clean 2014 Challenge with a fabulous group of very talented bloggers! For the next four weeks each blogger will have a new clean recipe for you.  For the purposes of this challenge, clean means little to no processed ingredients.  I hope you will come back every Saturday to see what we have come up with to share with you.  This week I have a delicious Taco Stuffed Avocado with Avocado Salsa recipe for you.

Taco Stuffed Avocado with Avocado Salsa - Yours And Mine Are Ours- A fun way to serve Taco Salad with an Out Of This World Avocado Salsa!

You are going to love the flavors and ease of this recipe. If you have family members who aren’t fans of avocado then no worries you can just use tortillas for their tacos. In that case then that means more avocado salsa for you and in my book that’s a win!  If served as written this recipe is low-carb friendly.

Taco Stuffed Avocado with Avocado Salsa - Yours And Mine Are Ours- A fun way to serve Taco Salad with an Out Of This World Avocado Salsa!

Taco Stuffed Avocado with Avocado Salsa

Ingredients

  1. 1 pound ground beef – browned
  2. 1/2 tablespoon cumin
  3. 1/4 tablespoon chili powder
  4. 1/4 teaspoon salt
  5. 1/4 teaspoon pepper
  6. 1/4 teaspoon cayenne pepper
  7. 1/4 cup water
  8. 4 avocado shells – 8 halves
  9. 1/4 head lettuce - shredded
  10. Garnishes
  11. cheddar cheese - shredded
  12. sour cream

Instructions

  1. Drain ground beef and add back to skillet with 1/2 cup water, cumin, chili powder, salt, pepper and cayenne pepper. Stir well and simmer for about 10 minutes.
  2. Meanwhile cut avocados in half and remove avocado meat from shells to make salsa – recipe below. Make sure to keep your shells in tact.
  3. Layer lettuce, taco meat mixture, cheese, avocado salsa and sour cream in avocado shells and serve.

Seriously you are going to be blown away by the Avocado Salsa!  Look at how gorgeous the colors are!  You could also serve this in a bowl with tortilla chips.  Oh and I may have eaten some straight from a bowl …. with a fork …. like a salad!  Yum!

Avocado Salsa - Yours And Mine Are Ours- Out Of This World flavor in this Avocado Salsa!

Avocado Salsa

Ingredients

  1. 4 avocados – cubed
  2. 1 pint cherry or grape tomatoes - sliced
  3. 2 lemons
  4. 1/4 teaspoon salt
  5. 1/4 teaspoon pepper
  6. 1/4 cup pickled jalapenos – diced

Instructions

  1. In a small mixing bowl add avocado cubes, tomatoes, salt, pepper and jalapenos. Stir gently to mix. Squeeze juice from two lemons into salsa mixture and stir to distribute.
