Avocado Walnut Salad Recipe

Recently, after much research, I have decided to make a lifestyle change with the food I eat. I don’t want to call it a diet because that would suggest it’s a temporary thing and that the only goal is to lose weight.  While losing weight is definitely one of my goals it’s not the only goal or even necessarily my main goal.  I want to feel better… healthier.  I want to be able to play with my grandkids and make it through the day without feeling so tired that it’s difficult to function.  This doesn’t  mean I will never eat the things I love, again.  To think  that would certainly be a short road to failure.  I’ve been on the road to healthier eating for a little over a week now.  I have to say I’m not feeling deprived at all and I feel a little better every day.  I am really enjoying some delicious food like this Avocado Walnut Salad!  I hope you enjoy it and I’ll be sharing many more recipes moving forward – some healthy and some not so much but all delicious!  This recipe is also low carb friendly.

Avocado Walnut Salad Recipe

Avocado Walnut Salad

18 oz. romaine lettuce
1/2 avocado, diced
1 stalk celery, diced
1/2 cucumber, diced
1/4 cup chopped walnuts
1/2 cup low carb vinaigrette dressing

Toss lettuce, avocado, celery, cucumber and walnuts together in a bowl.  Drizzle with dressing when serving.

Enjoy!
