I have a confession to make. Thanksgiving is next week and I haven’t even bought a turkey yet! As a matter of a fact I haven’t bought anything. Yikes! I am a huge procrastinator..always have been .. probably always will be. How about you – have you bought your turkey yet or are you a procrastinator like me?
I have a delicious low carb stuffed chicken recipe for you today and as a bonus it cooks in the slow cooker! I love my slow cooker and it saves me from my procrastinating self. If we use the slow cooker then I’m less likely to wait until it’s too late to make something for dinner.. well because I procrastinated and didn’t decide what to make or what to take out of the freezer. My husband named this recipe – The Chicken That Ate The Pig … I added on Stuffed Chicken so that you all would at least have an idea of what the heck he meant. *smile*
The Chicken That Ate The Pig – Stuffed Chicken
3 large boneless skinless chicken breasts
6 pieces thinly sliced deli ham
6 slices bacon
6 slices thinly sliced Swiss cheese
1 chicken bouillon cube
1/2 cup white cooking wine
1/2 cup water
1 teaspoon cornstarch
salt and pepper
Brown bacon but do not crisp then drain and pat dry.
Cut chicken breasts in half length wise and pound to 1/4 inch thick.
Layer one slice of bacon, ham and cheese on each piece of chicken.
Season with salt and pepper.
Roll each chicken breast and secure with a toothpick.
Crush bouillon cube and mix with 1/4 cup water and wine.
Place chicken in slow cooker and pour bouillon mixture over it.
Cook on high for 4 hours.
Mix 1/4 cup water and cornstarch then pour into slow cooker.
Let cook until sauce thickens.
