Here we are already .. day 5 of #IceCreamWeek 2014. Are you tired of ice cream yet? Okay, that was funny right? I mean who could ever be tired of ice cream?
This No Churn Low Carb Peanut Butter Coffee Ice Cream started out with a plan to be two different recipes, an almond butter and a coffee. Sometimes the universe and God laugh at my plans and send me in new directions which is quite okay especially when it leads to some awesomeness like this ice cream! I ran low on homemade low-carb sweetened condensed milk and there was no way I was going to have enough to make two more recipes and I was short on time.. what’s new … so two recipes became one. I know it may sound strange but trust me when I tell you that you must try it! It’s heaven in a bowl.. on a spoon.. and soon in your tummy : )

No Churn Low Carb Peanut Butter Coffee Ice Cream by Yours and Mine are Ours
Ingredients
- 12 oz heavy cream
- 4 oz homemade low-carb sweetened condensed milk Recipe found here
- 1 tablespoon vodka
- 3 tsp. pure coffee extract
- 1/2 cup almond butter
Instructions
- Place sweetened condensed milk, vodka, coffee extract and almond butter in a bowl or stand mixer. Mix until blended.
- Add heavy cream and mix until soft peaks form.
- Pour into a loaf pan. Place saran wrap on the top of the ice cream mixture so that it lays directly onto the ice cream and seal tightly around the pan. Try to keep air from getting trapped between ice cream and saran wrap.
- Freeze for 4 to 6 hours or until firm. If ice cream becomes too firm to scoop just let sit out on the counter for a bit until you can scoop it.
