What a difference a few days make! We had the nicest weekend here. The sun was shining and temperatures were in the 60’s on Saturday. Joe and I had a great time going to Columbus and hanging out at Easton. If you ever visit Columbus this is a place you will definitely want to put on your list. It’s a great shopping and entertainment area which has a village feel to it. I think I could of spent all day just browsing at The Container Store and Sur La Table! Did you know that Sur La Table offers cooking classes? I did not and was pleasantly surprised. We are definitely planning another date day around that!
Sunday was beautiful here as well. It was Kayleb, our second to oldest sons Birthday. I truly cannot believe that it’s been 24 years since I first held him and fell in love with that little scrunched up face. Sigh.. how time rushes by! If you’re still a young mom believe me they are grown before you know it. I know it doesn’t feel like that when you’re in the thick of it and they are doing things like pooping down air return vents which lead to your living room but really it does! Oh, who did that you ask? Well to protect the “not so innocent” I’ll keep their name out of it. Just believe me it wasn’t pretty! Oh and I might of cried.. a little.. okay hysterically.
For Kaylebs Birthday he asked me to make General Tso’s Chicken. This is a huge favorite for my kids. I have a tried and true recipe that I typically use when making it but for some reason I cannot find it. So, I decided to try this one from Juanita’s Cocina and it was really good. It did seem to take a really long time to make but it was worth it. I didn’t take any pictures – sorry – but you can get the recipe here. The only feedback I have as far as changing anything in this recipe is it would be great with some broccoli and snow peas just steamed and tossed in as well as some more red pepper flakes for heat. Other than that is was great!
I’ve mentioned previously that we love Mexican food but I’m not sure I’ve ever mentioned that we are also pretty crazy about Asian food! In fact I could probably eat it almost every day and never tire of it. Enter this yummy Beef & Broccoli recipe that I found while browsing Pinterest – from Table for Two Blog. If you want a quick Asian stir fry that you stick in the slow cooker and forget until it’s ready then you really need to try this! *NOTE* – The measurements below will make 8 servings. If you only need 4 then cut in half.
Ingredients
- 2 pounds boneless beef – sliced in strips (you can use whatever is on sale that week)
- 2 cups water
- 3 beef bouillon cubes
- 1 cup soy sauce
- 2/3 cup brown sugar
- 2 tablespoon sesame oil
- 6 minced garlic cloves
- 4 tablespoons cornstarch
- 1 large head fresh broccoli
- 3 cups white rice – cooked according to pkg.
Instructions
- Add soy sauce, water, bouillon, soy sauce, brown sugar, sesame oil and garlic to your slow cooker and mix well.
- Add slices of beef and stir to coat with liquid mixture.
- Cook on low for 4 to 6 hours.
- Once finished cooking remove 4 tablespoons of the sauce mix from the slow cooker and place in a small dish. Add the cornstarch and mix well. Pour back into the slow cooker, mix well, add your broccoli at this point and cook for an additional 30 minutes to thicken.
- Serve over rice and enjoy!
