Happy hump day! Wednesday always reminds me of the commercial with the camel walking around asking “Guess what day it is?” Don’t you love that commercial? I’m always amazed how the simplest thing can be such a hit. Speaking of simple I have another easy appetizer recipe for you today – Low-Carb Shrimp Guacamole. I love guacamole and thought we would switch it up a bit from the typical recipe. I’m so glad we did because it is so good!

Ingredients
- 4 Avocados
- 1 Tablespoon Extra Virgin Olive Oil
- 1 Teaspoon Lemon Juice
- 1/2 Teaspoon Dill (Fresh Dill was not available so I used Dill Paste)
- 1 Cup small shrimp – chopped
- 1/2 Teaspoon Salt
- 1/4 Teaspoon Pepper
Instructions
- Cut avocados in half, around the seed, and then gently pull apart. You can remove the seed by taking the sharp side of your knife and smacking it into the seed and then pull the seed out with the knife. Using a spoon then clean the flesh of the guacamole out of the skin and put in a bowl. Discard skins.
- Smash guacamole with a fork, add Olive Oil, Lemon Juice, Dill, Salt and Pepper and mix well.
- Add chopped shrimp and mix.
- If you have some shrimp left over you can garnish the bowl with a few as well as a pinch of salt and pepper.
- Serve and Enjoy!
