This Pimento Cheese Stuffed Merlot Burger recipe is perfect for those nights when you want a burger but are craving something a little more than the everyday normal burger. They would also be perfect for a date night in.
This week the Sunday Supper crew is sharing the table with Gallo Family Vineyards and the theme is grilling. Who doesn’t love cooking on the grill or at least eating food that has been cooked on the grill? If we didn’t live in Ohio where the weather refuses to cooperate, we would cook on the grill all year long!
It’s the strangest thing but for the past month I have been craving hamburgers. That’s strange because I typically do not care for hamburger at all. When we do cook with it I either pick most of it out or have to have it smooshed and chopped really fine. I’m not really sure when this aversion to hamburger even started but since the price has risen so much it really is sort of a good thing. Until lately when like I said I have really been craving them. I knew I wanted something different though and not your everyday burger. Enter this Pimento Cheese Stuffed Merlot Burger. This burger is amazing! The wine reduction and seasonings in the burger meat make it so tender and juicy and then pair that with the gooey pimento cheese oozing out of the middle and the chewy pretzel bun and ~cue music~ it’s heaven on a bun!! Yum! Seriously you have to make this burger.. you won’t be sorry!
Ingredients
- 1.5 lbs. ground beef
- 1 teaspoon pepper
- 1 teaspoon salt
- 1 teaspoon Worcestershire sauce
- Merlot Reduction
- 1.5 cups Gallo Family Vineyards Merlot wine
- 1.5 tablespoons brown sugar
- Pimento Cheese Filling
- 2 tablespoons mayonnaise
- 2 tablespoons pimentos
- 1 cup shredded sharp cheddar
- 1/2 teaspoon dry mustard
- 1/4 teaspoon pepper
- 4 pretzel buns
Instructions
- In a small saucepan mix merlot and brown sugar then bring to a boil. Continue to simmer for approximately 20 to 25 minutes, until reduced to approximately 1/4 cup. Once reduced allow to cool for approximately ten minutes.
- Meanwhile make your filling by mixing mayonnaise, dry mustard and 1/4 teaspoon pepper. Add wet mixture to the shredded sharp cheddar and pimentos. Mix and smash using a fork. It should be chunky but not appear shredded once finished.
- In a large bowl mix ground beef with 1 teaspoon pepper, 1 teaspoon salt, 1 teaspoon Worcestershire sauce and the merlot reduction.
- To assemble your burgers make 8 thin patties. Try to make them all equal in size. Divide the pimento cheese filling and place on top, in the center of four of the patties. Now take the other four patties and place them on top of the pimento cheese filling. It’s almost like making a sandwich. You now need to pinch the sides together and then smooth them so that the burger is sealed around the pimento cheese filling.
- Cook on the grill for about 6 to 8 minutes on each side. We like ours medium rare so we cooked them for 6 per side but if you like yours medium do 7 per side and well done I would say 8 per side.
- We served these on pretzel buns and they were amazing! If you do not like pretzel buns make sure you choose a solid bun. Your typical everyday hamburger bun will not hold up as well to the heft of this burger. Or if you’re low carb just forget the bun all together.
