With the prices of beef continually rising, chicken has become a staple on our menu. We can typically find boneless chicken breasts on sale for $1.65 a pound verses $2.19 or more a pound for ground beef. So, we are always on the lookout for new ways to serve chicken. This is why I was anxious to review 125 Best Chicken Recipes by Rose Murray. So far we have only had a chance to try one of the recipes, the Roasted Chicken Fajitas, but if they are any indication of the quality of the recipes in this cookbook.. then yum!
The Roasted Chicken Fajita recipe was a huge hit with our family. It’s delicious, easy to prepare and was ready in about 30 minutes tops! You can tweak it to use the ingredients you have on hand, what’s in season or on sale. The recipe as written, calls for 2 large red peppers but as you can see we didn’t have those on hand so we improvised. It still turned out great! We also doubled the recipe. In order to see the recipe as written by Rose, you will need to buy the book 😉 I’m sharing our version below.
Ingredients
- 2 pounds boneless skinless chicken breasts
- 4 tablespoons vegetable oil
- 2 tablespoons lemon juice
- 2 teaspoons chili powder
- 1 teaspoon ground cumin
- 1 medium green bell pepper – cut into strips
- 1 medium yellow bell pepper – cut into strips
- 7 oz. Sun Dried Tomatoes with Zesty Peppers.
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 16 flour tortillas
- 2 cups shredded lettuce
- 2 avocados – cubed
- Salsa or Hot Sauce
- Sour Cream
Instructions
- Preheat oven to 400 and grease a large shallow roasting pan.
- Slice chicken into thin strips. Toss with oil, add lemon juice, chili powder and cumin. Set aside.
- Combine peppers in prepared roasting pan. Drizzle with remaining oil; sprinkle with salt and pepper. Add chicken mixture; stir to combine and spread out in the pan. Top with sun dried tomatoes.
- Roast in preheated oven, stirring once or twice, for 20 to 25 minutes or until chicken is no longer pink inside and vegetables are tender.
- Meanwhile, wrap tortillas tightly in foil and place in the oven for 10 minutes to heat. We wrapped them in packages of four.
- Serve warm with lettuce, avocado, salsa or hot sauce and sour cream as garnish.
