Before now the most I knew about Fat Tuesday was that the place to be was New Orleans and it included one heck of a party with great food and lots of booze! I had never bothered to learn more about it but at the same time I knew that someday I wanted to be a part of it. It looks like such a good time! So, I did what any good blogger would do when needing to learn more about a subject and I googled it! A very brief summary? It’s the last hurrah before giving up that favorite food or drink before the lenten season. I’m sure most if not all, of you already knew that but it was interesting to me so I thought I would share it with you.. just in case. I’m not so great at giving up things, especially when it has to do with food and those who do have my utmost respect.
This week for #SundaySupper we’re celebrating with Fat Sunday and I’m sharing with you a delicious traditional New Orleans Favorite! Sausage and Shrimp Jambalaya!
Ingredients
- 2 pounds medium shrimp – peeled & deveined (do not discard shells)
- 1 pound andouille sausage – cut in 1/4 inch rounds
- 2 green peppers – chopped
- 3 ribs celery – chopped
- 1 teaspoon salt
- 1 teaspoon red pepper
- 1 can whole tomatoes – broken apart and undrained
- 3 cloves garlic – minced
- 1 teaspoon cayenne pepper
- 2 cups long grain rice
- 2 fresh bay leaves
- 1 bundle fresh thyme
- 5 scallions for garnish – sliced thin
Instructions
- Fill large stock pot with water and add the shrimp shells. Bring to a boil and then remove from heat. Set aside for 15 minutes.
- In a Dutch Oven or other similar large pan heat olive oil to medium-high. Add the andouille sausage and cook until sauce is lightly browned. Add the peppers, celery, salt, cayenne and red pepper. Cook until peppers and celery have softened and then add the garlic, cooking for three more minutes. Add the tomatoes and rice then stir to combine.
- Remove the shrimp shells from your stock pot and add four cups of the stock to your jambalaya. Toss in the bay leaves, thyme then cover and cook for 24 minutes.
- Add the shrimp and cook until shrimp turn pink.
- Serve with chopped scallions for garnish.
