These Blue Cheese, Bacon and Cranberry Stuffed Mushrooms are the perfect appetizer for a more sophisticated palate.
My husband and I are foodies. We love trying new foods even when we think we may not enjoy them. Often we find that we enjoy some part of all new foods that we try. It’s not often that there’s a food we won’t try.
It’s not uncommon for us to spend a day going to various international groceries where we will purchase new ingredients to try. You will often find us checking out the spices because you can get a lot of flavor bang for your buck by just using a little spice. If you saw our spice cabinet you would not believe the amount or variety of spices we own. It really is crazy.
We also enjoy watching what I call, foodie movies. Movies like Burnt starring Bradley Cooper, Sienna Miller and Matthew Rhys. I’m often inspired to cook new recipes or with new ingredients, after watching one of these movies.
Burnt had us wanting to try something new and since cheeses are another area where we enjoy tasting new varieties we were really excited to try Castello Danish Blue Cheese. We have numerous markets in a nearby large city that have a large variety of cheeses. We love to purchase several new varieties every week or two and try them out.
Blue Cheese is one of those cheeses that many dislike purely due to the smell or look of it. We used to be the same way! We got past our fear of it, gave it a try and now we love it! Give it a try and you might be surprised to find that you love it too. The Castello Danish Blue Cheese is a great brand to try because it’s extra smooth and creamy with a bit of a milder flavor than some.

Ingredients
- 16 oz. Whole Baby Bella Mushrooms
- 5 oz. Castello Danish Blue Cheese, Crumbled Extra Creamy
- 1/8 cup sliced almonds
- 1/8 cup dried cranberries
- 1/4 cup bacon bits
- 1/4 cup green onions, tops only- sliced
Instructions
- Remove and discard stems from mushrooms and clean.
- Add blue cheese, almonds, cranberries, bacon bits and green onions to a small bowl and stir to mix.
- Place mushrooms in a 9x11 baking pan and fill with blue cheese mixture.
- Bake at 350 for 18 – 20 minutes.
