Chicken Tortilla Soup

It’s no secret that I love my slow cooker. It’s possibly the most used small appliance in my kitchen.  So, it goes without saying that recipes that can be cooked in that baby are at the top of the list for me!  That’s just one of the reasons I love this Chicken Tortilla Soup that I found in The Magical Slow Cooker Cookbook by Sarah Olson.

I love to cook but there are days when I have very little time and even less energy and it’s on those days when recipes like this Chicken Tortilla Soup are a lifesaver!  Okay maybe I’m being a little dramatic there, maybe not a lifesaver but definitely a dinner saver.
Magical Slow Cooker

Sarah’s blog The Magical Slow Cooker has been a go to resource for me for quite some time. I love the variety and quality of recipes that she puts out.  Most of all I love that they are simple recipes that everyone can pull off, even on the busiest of days.  Now in addition to her blog she has just completed a cookbook called The Magical Slow Cooker.  You will find 215 jam packed pages of recipes for everything from Breakfast to Desserts and they can all be made in your slow cooker!  Bam!  How is that for awesome?

I paged through this cookbook probably three times from front to back trying to decide what I should make before I finally decided on this Chicken Tortilla Soup.  For one it looked great, two it has only about 10 ingredients and three because I had most of what I needed already on hand.  I changed it slightly but that was simply so that I didn’t have to go to the store and get what I was missing.  I can be lazy like that some days.  Wanna see the original recipe?  Buy the book!  Seriously though you won’t be disappointed so go … hurry.. buy the book!

Chicken Tortilla Soup

Ingredients

  1. 4 cups water
  2. 4 bouillon cubes
  3. 14 oz. red enchilada sauce
  4. 10.75 oz. can of cream of chicken soup
  5. 2 diced jalapenos
  6. 1 1/2 lbs. boneless chicken thighs
  7. Garnish
  8. Monterey Jack Cheese – shredded
  9. Cilantro
  10. Avocado – cubed or sliced

Instructions

  1. Add water, enchilada sauce, cream of chicken soup, jalapeno and bouillon cubes to a 5 or 6 quart slow cooker and stir to mix. Add chicken breasts, cover and cook on low for 8 hours. No peaking! Leave that lid closed.
  2. Shred chicken and stir soup to mix before serving with choice of garnishes.
