If you need something quick for a party or trick or treat night this dip is going to be a perfect option! It tastes great and with the added protein & vegetables it can work as a meal.
Does your city have trick or treat on weeknights? It seems that regardless of the night Halloween actually falls on, our town always has it ahead of time on a weeknight. Making matters worse is the time that it’s held. In our city it’s normally 5:30 – 7. When all of our kids were young it was such a stressful holiday. We would have to rush home from work and have to try to get dinner ready, costumes on and out the door. I know we could have chosen not to participate but kids love trick or treating and I never wanted to take that away from them.
So, how do you get home from work and get your kids fed, dressed and out the door in time for trick or treat? Make sure you have everything needed for each child’s costume ready and in one place. If at all possible try gathering everything together a few days in advance so that if you need something you don’t have to run around at the last minute trying to find that all important item to go with a costume. If you have a large family to get ready try helping the oldest get ready and then enlisting them to help the little ones get ready.
As for dinner plan ahead and put something in your crockpot the night before and place in the refrigerator until morning, take it out, set it and when you get home dinner is ready. Another option is to prepare some snack type foods and just let the kids grab some as they get ready. It’s one day a year and let’s face it they are going to be eating more candy than what we normally would give them in a months time, just in that one night, so why not make your life a little easier and serve a buffet of dips, veggies, crackers and other snack foods. You could always add some fruit to the offering as well.

Ingredients
- 2 8oz. blocks of cream cheese – softened
- 28 oz. can whole tomatoes – chopped and drained
- 8 oz. cheddar cheese – shredded
- 16 oz. pkg Farm Rich Smokehouse Dry Rub Smoked Chicken
- 6 green onions – cleaned & sliced
- 1 teaspoon cayenne pepper
- 1 teaspoon chili powder
- celery – chopped into 3 inch pieces for dipping
Instructions
- Mix cream cheese, cayenne pepper and chili powder until smooth and well blended.
- Heat chicken in microwave according to package directions.
- Add chopped tomatoes, shredded cheese and chicken to cream cheese mixture and stir to incorporate.
- Spread dip into a 9x11 baking pan and bake at 375 for 15 to 20 minutes or until hot and bubbly.
- Garnish with sliced green onions.
- Serve with celery sticks for dipping.

This is the costume that mommy put together for Isaiah. He doesn’t seem to be nearly as pleased with it as he was with the one he made himself. LOL
It’s only fitting that our little “punkin” be dressed as a pumpkin. I don’t really think he cares either way though. : )
