Chili Cheese Chicken Dip

This recipe for Chili Cheese Chicken Dip was developed as a part of a partnership with Farm Rich Smokehouse BBQ utilizing the #smokehousebbq products, but the recipe and all opinions are my own.  If you need something quick for a party or trick or treat night this dip is going to be a perfect option! It tastes great and with the added protein & vegetables it can work as a meal.

Does your city have trick or treat on weeknights?  It seems that regardless of the night Halloween actually falls on, our town always has it ahead of time on a weeknight. Making matters worse is the time that it’s held.  In our city it’s normally 5:30 – 7.  When all of our kids were young it was such a stressful holiday.  We would have to rush home from work and have to try to get dinner ready, costumes on and out the door.  I know we could have chosen not to participate but kids love trick or treating and I never wanted to take that away from them.

So, how do you get home from work and get your kids fed, dressed and out the door in time for trick or treat?  Make sure you have everything needed for each child’s costume ready and in one place.  If at all possible try gathering everything together a few days in advance so that if you need something you don’t have to run around at the last minute trying to find that all important item to go with a costume.  If you have a large family to get ready try helping the oldest get ready and then enlisting them to help the little ones get ready.

As for dinner plan ahead and put something in your crockpot the night before and place in the refrigerator until morning, take it out, set it and when you get home dinner is ready.  Another option is to prepare some snack type foods and just let the kids grab some as they get ready.  It’s one day a year and let’s face it they are going to be eating more candy than what we normally would give them in a months time, just in that one night, so why not make your life a little easier and serve a buffet of dips, veggies, crackers and other snack foods.  You could always add some fruit to the offering as well.

If you’re considering going the snack route here’s a delicious recipe for a Chili Cheese Chicken Dip that you can put together ahead of time and refrigerate until you’re ready to heat it up.  It’s full of good quality ingredients like Farm Rich Smokehouse Chicken so you don’t have to feel bad about serving a dip for dinner.  Serve it with carrots and celery so that you get some veggies in too.  Your kids think you’re the most awesome mom ever because you let them eat dip for dinner and you feel good because you know they had a mostly balanced meal made with wholesome, quality ingredients.  Win..win!  This is also low-carb so no guilt in indulging as much as you like!

What are your tips for getting dinner on the table on those busy nights like trick or treat?

Isaiah

This is the costume that Isaiah put together himself.  You can see he’s quite pleased with it 🙂  Grandma & Grandpa think he did an awesome job!  What do you think?

Isaiah2

This is the costume that mommy put together for Isaiah.  He doesn’t seem to be nearly as pleased with it as he was with the one he made himself.  LOL

Punkin

It’s only fitting that our little “punkin” be dressed as a pumpkin.  I don’t really think he cares either way though.  : )
