Crispy Parmesan Ranch Chicken Recipe

I recently went back to working full time after being laid off for seven months.  It’s a bit of an adjustment even though I work from home. My husband works part time in the evenings and I get off of work when he’s going to work.  Today was his turn to cook but the wrong chicken was taken out of the freezer making it take longer to thaw.  I have to admit the last thing I wanted to do tonight when I got off work was cook.  The alternative was eating out and quite honestly that wasn’t appealing either.  I’m glad I went ahead and made this Crispy Parmesan Ranch Chicken recipe as it took less than 15 minutes to prepare and then only 45 minutes to bake not to mention it was delicious! I served it with baked potatoes.  It would go great with a salad also.

Crispy Parmesan Ranch Chicken 

Serves 5

2 lbs. or 5 chicken breasts
3 Cups Fine Dry Bread Crumbs
Approximately 2 cups ranch dressing – homemade or bottled
1 small package Dry Italian Dressing Mix
2 Tablespoons Fresh Grated Parmesan Cheese
1 Tablespoon Dry Powdered Garlic
Preheat the oven to 400F.

Mix all ingredients well, except for the ranch dressing and chicken, in a large bowl.  Set half of the dry mixture aside and only add if needed.  If not needed you can put into a freezer bag and store in the freezer to use later.  Pour the ranch dressing onto a plate or shallow dish.  Coat each chicken breast with ranch dressing and then coat with the dry breading mix. Make sure that each piece is coated well.
Bake for 45 minutes – carefully turning once after 25 minutes of cooking.  Remove from oven and serve hot.  You can also garnish with additional Fresh Grated Parmesan Cheese, if available.
