Crockpot Wednesdays-SlowCooker Salsa Chicken

Welcome to the first Crockpot Wednesday!  I’m excited to be bringing you a new crockpot recipe tried and reviewed every week. This week we have Salsa Chicken but first I want to talk a little about how this idea was “born”.

I mentioned a few weeks ago that I had recently gone back to working full time after being off for seven months.  Previously I had worked in a high stress position where I worked 60 or more hours a week, most weeks.  My new position only requires 40 hours per week at most which is great.  The difference is that my husband hadn’t worked for many years due to a work injury which resulted in a disability.  This worked well for us in the sense that he would cook, clean and keep an eye on the kids.  In March of last year he went back to work part time so it’s a little different this go round.  With both of us working evenings it’s a bit of a challenge for us to get dinner on the table every night.  We found that we were eating out way too much!  Quickly I realized that what we had been doing was not working and there had to be a better solution.

Enter Pinterest… do you ever wonder when you’re going to try all of those wonderful crafts, recipes and DIY that you’ve spent hours and hours pinning?  So do I!  So, a perfect solution was born!  We would finally begin to work our way through all of the fabulous crockpot recipes that I have been accumulating on Pinterest.  Why didn’t I think of this in the first place?  We would save money and whittle down that to try list on my crockpot recipes board.  Win!  Win!

Every Wednesday we will be trying a new crockpot recipe I’ve found on Pinterest and then sharing it here along with any thoughts or suggestions for improvement.  If you have a crockpot recipe you’ve been wanting to try and don’t want to put the time or money into it for fear it may be a flop .. leave a link here with a comment and maybe we will try it for you!  : )  How great would that be?  Your own personal guinea pigs.

This week we tried Slow Cooker Salsa Chicken which had been pinned from Chef Mommy .
This recipe was a hit!  It was super easy and took literally no prep work.

We really enjoyed it but would suggest either doubling the amount of salsa or replacing the salsa with two cans of diced tomatoes with chilies. We also doubled the original recipe and I have provided the doubled measurements below.

So here you are.. the first recipe in the new Crockpot Wednesdays feature.. tested and family approved.

Slow Cooker Salsa Chicken

Ingredients
2 pounds boneless chicken breasts
2 cans cream of chicken soup
2 cups salsa
2 packages taco seasoning
2 cups sour cream
Cilantro for garnish when serving.  *Optional
4 cups rice
Add chicken, cream of chicken soup, taco seasoning and salsa in crockpot.  Cook on low for six hours.  Take two forks and shred the chicken in the crockpot.  Stir in sour cream and then cook for an additional 30 minutes.  Meanwhile cook rice according to package directions.
Serve over rice and garnish with cilantro.
