There’s something about cold weather and stew or soup. They just go together. Add in a great glass of wine and all is right with the world. Cold weather, polar vortex, snow and ice – well they just don’t seem so bad all of a sudden. If you’re lucky enough to not be experiencing any of the nasty weather conditions mentioned above well you are still going to want to try this Hearty Burgundy Beef Stew because seriously it’s the bomb! Really, I totally outdid myself on this one if I do say so myself. Pair it with a glass of Gallo Hearty Burgundy or Cabernet Sauvignon and you have a great meal for a romantic date night without ever having to leave home.

In the interest of full disclosure my husband is not hard to please and really likes most anything I cook for him. I do have to tell you though that he loved this stew and I think he probably could have eaten the whole pan himself if I wouldn’t of made him share!
Ingredients
- 2 pounds beef chuck –cut into chunks
- 5 oz. pancetta – cut into cubes
- 2 garlic bulbs – minced
- 3 1/4 cup Gallo Family Vineyards Hearty Burgundy
- 8 oz. Baby Portobello Mushrooms
- 32 oz. Baby Carrots
- 1 Bundle Green Onions – diced
- 1 Tablespoon butter
- 2 Tablespoons olive oil
- Salt
- Black Pepper
- 1 Tablespoon Flour
- 2 Bay Leaves
- 1 Thyme Sprig
- 1/2 teaspoon sugar
- Chopped fresh parsley – garnish
Instructions
- Preheat oven to 350.
- In a large, oven safe, dutch oven, melt butter and 1 Tablespoon olive oil. Add beef chunks in a single layer and brown on all sides. *You may need to do this in two batches. Season with approximately 1/2 teaspoon each of salt and pepper.
- Once all beef is browned add green onions and garlic. Cook over medium heat for about 2-3 minutes – just until garlic and onion are slightly soft.
- Add the flour and stir to coat the meat.
- Add the wine, bay leaves, thyme and another 1/2 teaspoon of salt and pepper. Bring to a boil making sure to stir often while scraping the brown bits off of the bottom of the pan.
- Cover the dutch oven and put into the oven. Cook for 90 minutes.
- In a large skillet add pancetta and 2 cups of water. Bring to a boil, reduce heat and simmer for 30 minutes. Drain all water off. Add mushrooms, carrots, 1 Tablespoon olive oil, 1/4 cup water, 1/2 teaspoon sugar, 1/2 teaspoon salt and 1/2 teaspoon pepper. Bring to a boil, cover, simmer for 15 minutes.
- Turn heat up to high on vegetable / pancetta mixtures and continue cooking for about five minutes or until browned and tender.
- Mix 2/3 of vegetable mix into stew. Use the remaining vegetable mix along with the parsley as a garnish.
