Homemade Parmesan Italian Salad Dressing will quickly be a favorite in your house just like it is ours. Use it sparingly because it packs a huge punch of flavor. Another bonus is that it comes together quickly.
On occasion I will buy ready made salad dressings if I find a good sale or it’s a new flavor that we really want to try but we really prefer homemade. We can make just what we need so that we don’t have a bunch of bottles taking up space in the refrigerator and adjust the spices to our liking. Not to mention the flavor is just fresher of course.
I was really excited when I found the Eggplant Parmesan by Michael Angelo’s at Kroger’s! I’ve been wanting to try it for quite some time. What a great main dish to go with a simple side salad topped with the Homemade Parmesan Italian Salad Dressing. I also grabbed the Lasagna with Meat Sauce just in case not everyone in the family liked the Eggplant Parmesan.
Kroger currently has their Taste of Italy event taking place through October 13th. I love the balloons and how festive it feels. Silly? Maybe, but I still like it. Make sure to check out your local Kroger online and in store where you will find additional savings and coupons.
I have to tell you that I was seriously surprised by how good both of these entrees turned out to be. The Eggplant Parmesan was a favorite for me but the lasagna was a close second. Normally I am extremely picky about my Italian food. I don’t generally enjoy the marinara sauce in most freezer meals but everything about these was good.
These two family sized entrees were $5.99 each, on sale at our Kroger. I was able to feed our family of eight with two entrees and the salad. It went much farther than I expected, tasted so much better than I anticipated and we will definitely be having this again in the future.

Ingredients
- 2 medium tomatoes
- 1/2 cup water
- 2 tablespoons red wine vinegar
- 2 tablespoons lemon juice
- 4 teaspoons tomato & olive mustard *
- 4 tablespoons basil infused extra virgin olive oil *
- 2 cloves garlic, minced
- 1/2 teaspoon oregano
- 1 teaspoon salt
- 1/2 teaspoon ground peppercorn
- 4 tablespoons of rosemary and garlic Parmesan Cheese *
- ** You can use regular yellow or dijon mustard, plain extra virgin olive oil and plain Parmesan Cheese, if you do not have the varieties listed here.
Instructions
- Core tomato and slice in half. Use the coarse side of a grater and grate the insides of the tomato into a medium bowl, discarding skins.
- Add remaining ingredients into the bowl and whisk until well blended. You can also add all ingredients to a mason jar and shake until well blended.
- Refrigerate until you’re ready to serve.
