Margherita Pizza with Cauliflower Crust #WeekdaySupper

This Margherita Pizza with Cauliflower Crust is fancy enough for company but easy enough for a weeknight meal.  As an added bonus it’s also healthier than your traditional pizza and low-carb friendly.

I’ve wanted to try both cauliflower crust and margherita pizza for quite some time now.  Finally, I decided why not try both at the same time.  I’m glad I tried it and it’s a great low-carb option however I have to admit that although it is very good it still left me craving the traditional crust pizza.

Margherita Pizza with Cauliflower Crust

Ingredients

  1. Margherita Pizza with Cauliflower Crust
  2. 2 heads cauliflower
  3. 2 cups shredded mozzarella
  4. 1 cup grated parmesan
  5. 2 large eggs
  6. Nonstick Spray
  7. 2 tablespoons olive oil
  8. 8 garlic gloves – minced
  9. 2 tablespoons fresh thyme leaves
  10. 2 tablespoons fresh oregano leaves
  11. 2 28 oz. cans of whole tomatoes- drained and crushed
  12. 2 tablespoon salt
  13. 2 tablespoon pepper
  14. 16 oz. fresh mozzarella
  15. 1/2 cup fresh basil leaves
  16. 4 roma tomatoes –sliced

Instructions

  1. Wash and dry cauliflower.  Cut off the florets and put into your food processor.  You will want to do this one head at a time.  Pulse until it resembles snow.  Place cauliflower into a microwave safe bowl, cover and cook for about 7 to 8 minutes or until soft.  Remove and let cool.
  2. Meanwhile while cauliflower cools make the sauce.  In a large sauce pan over medium heat, add the olive oil, garlic, thyme and oregano.  Cook until fragrant then add the tomatoes and crush with a spoon or potato masher.  Add 1 tablespoon of salt & pepper.  Lower heat and simmer for 7 to 8 minutes.  Remove from heat and set aside.
  3. Now that cauliflower is cool mix in the egg, mozzarella, parmesan and 1 tablespoon of salt & pepper and mix well.  Divide cauliflower mixture into two parts and spread each part onto a jelly roll pan. Spread it thin so that it covers all parts of the pan.  Spray the top of the mixture lightly with nonstick cooking spray.  Bake for 15 minutes.  The entire crust should be golden brown.
  4. Top the pizza with sauce, mozzarella and tomato slices.  Bake until the mozzarella is melted and bubbly – approximately 10 minutes.  Top with fresh basil leaves prior to serving.
