One of the challenges I find myself facing now that I’ve cut out carbs is having food on hand that is quick in a pinch.  You know those nights when you have a million things to do and places to be but yet you still have to get dinner on the table.  It’s not as easy as it used to be when I could just throw some pasta dish together and have it on the table in under 30 minutes.

Lunchmeat and cheese roll ups can be great in a pinch but I generally like to save those for a quick lunch.  When planning dinners I like to have a good, made from scratch meal that includes high quality ingredients.  I like dinners to feel special even when we don’t spend a ton of time making them.


Everyday Scratch is a #NewFromHormel line that fills that, I need a fast and delicious meal dilemma, that I was excited to find in our Kroger Luncheon Meat aisle.  I love salads but they can be a little boring with just the basics.  When I saw the Everyday Scratch ready-to-go proteins I knew instantly what I wanted to do with it.  It would be a perfect addition to a huge salad with a homemade dressing.  By adding a little something special to the salad it would really help to bump it up a notch.  I love that the Everyday Scratch line has 0g of trans fat and no preservatives.  Oh and the taste is seriously amazing!  It’s huge on flavor and so is this Mexican Chopped Salad with Creamy Cilantro Lime Dressing.  Bonus.. it can be on the table in 20 minutes or less.


For this Mexican Chopped Salad and Creamy Cilantro Lime Dressing with ready-to-go proteins salad we used the Everyday Scratch Flame Seared Carnitas.  The Buffalo Style Chicken Hot Sandwich Meat would also be a perfect protein to add to this salad.  I know it’s branded as a Sandwich Meat but don’t let that limit you.

Mexican Chopped Salad and Creamy Cilantro Lime Dressing


  1. Half head of red leaf lettuce – chopped
  2. Half head of green leaf lettuce – chopped
  3. 2 tomatoes – chopped
  4. 2 avocados – chopped
  5. 8 oz. colby cheese – shredded
  6. 15 oz. package Everyday Scratch Flame Seared Carnitas
  7. Dressing
  8. 3/4 cup mayonnaise
  9. 3/4 cup sour cream
  10. 2 Jalapenos – seeded and chopped
  11. 1 lime – juiced
  12. 1 tablespoon cilantro
  13. 1/4 teaspoon salt
  14. 1/2 teaspoon adobo seasoning
  15. 1/2 teaspoon cumin
  16. 1/2 teaspoon chili powder
  17. 1/2 teaspoon pepper


  1. Heat Everyday Scratch Flame Seared Carnitas according to package directions and set aside.
  2. Chop lettuce, tomatoes and avocadoes, and place in a bowl.
  3. Shred cheese and add to the your chopped salad vegetables.
  4. Shred heated Flame Seared Carnitas and add to the top of your salad.
  5. For the salad dressing:
  6. Add all dressing ingredients to a blender and liquefy. Add dressing to salad or serve on the side. If you have an opportunity to make the dressing ahead of time you can store it in the refrigerator in a mason jar and it will thicken as it chills.
