Not Just Any Pizza Soup Recipe – A MUST TRY!

The first time my husband made Pizza Soup for us I didn’t care for it.  I’m not a big fan of ground beef and the original recipe called for it as well as being a little bland to me.  The next time he made it he kept that in mind and it improved significantly.  Each time he made it the soup was better and better until it finally evolved into the recipe I’m going to share with you today.  I absolutely LOVE this Pizza Soup and request that he make it for me often!  He will make a pot of it and then freeze it in individual servings so that I can eat it for lunch.  I can’t tell you how many times I’ve had a craving for this soup and he’s gone right out to grab the ingredients and make me some.  My husband is just great like that! : )

This recipe is spicy so feel free to adjust to your tastes as needed.  We love it like this!  You can add more vegetables if you like or less.  You could add red peppers, yellow peppers, spicier hot peppers like Serrano etc.  We like to mix up the vegetables and sometimes add more.

By the way I had to beg my husband to share this recipe with you all.  It’s his special creation and he was a little hesitant.  With gentle persuasion he gave in. <GRIN>

Not Just Any Pizza Soup Recipe -

Makes 10 servings.

6 Cans Tomato Soup
1 lb. chorizo
6 Cans of water
18 oz. pepperoni
3 Green Peppers – Chopped
16 oz. Mushrooms – Sliced
5 Jalapenos – Chopped
1 Tablespoon Cayenne Pepper
1 Teaspoon Chili Powder
1 Teaspoon Oregano
1/2 Teaspoon Garlic Powder
16 oz. Mozzarella Cheese

In a stock pot mix soup and water well.  Add pepperoni and spices. Cover and simmer on medium/low heat, stirring occasionally to ensure no sticking.

In a large skillet cook chorizo (remember to take this out of the casing), mushrooms, green peppers and jalapenos. Cover and cook on medium heat for about 20 minutes, stirring occasionally.

Once chorizo has cooked through and vegetables are soft scoop meat and vegetables out of the pan and into the soup.  You do not have to drain the meat but do not dump all of the fat into the soup.  Using a slotted spoon will give you a perfect balance.

Once all ingredients are added to the stockpot, cover and simmer for a half hour on low, stirring occasionally.

Serve in bowls with mozzarella cheese on top.
