Chilaquiles is a Mexican dish with fried tortilla chips, spicy tomato sauce and cheese. Use a prepared marinara sauce & add eggs and you have a quick and easy meal suitable for those busy weeknights or any night you want to get in and out of the kitchen in a hurry.
I prefer a homemade marinara sauce but on busy nights when time is limited, I’m always looking for a way to save on time in the kitchen. I’ve used prepared sauces before but typically only find them okay. Mezzetta offers their Mezzetta Napa Valley Homemade Marinara Pasta Sauces, a high end line of sauces which tastes like homemade. The flavors are fresh, they use 100% hand-selected plum tomatoes, have no added sugars and no paste. So far I’ve only tried the Spicy Marinara but I will definitely be headed back to purchase the other varieties very soon.
Ingredients
- 2 jars Mezzetta Spicy Marinara
- 6 large eggs
- 1 10 oz. bag yellow tortilla chips
- 1 medium jalapeno – sliced
- 6 oz. queso fresco cheese – crumbled
- olive oil spray
- 1/2 cup chopped fresh cilantro
- salt and pepper to taste
Instructions
- Bring Spicy Marinara to a simmer over medium heat in a large skillet.
- Spray a skillet with olive oil spray and heat pan over medium heat until hot. Crack eggs into skillet and cook for 3-4 minutes, flipping halfway through, until whites are set and yolks are still runny.
- Add tortilla chips to the Spicy Marinara and stir to coat. Top the chips and sauce mixture with eggs, queso cheese, jalapenos, cilantro and salt & pepper.
