Simple Potato Soup and Dumplings

It’s very rare that we eat the same thing more than once but there are those go to recipes that we revisit now and again. Sometimes there’s just something about having a comforting meal from our childhood that brings back memories and is therefore comforting in more ways than the norm of satisfying hunger or a craving. This Simple Potato Soup and Dumplings recipe is one of those recipes that brings back memories of my childhood as well as my children’s childhood.

Simple Potato Soup and Dumplings - Yours And Mine Are Ours - Incredibly satisfying and simple meal that requires few ingredients!

Few ingredients are needed to make this Simple Potato Soup and Dumplings and it comes together fairly quick. Make sure to stir it frequently once you have added the milk. Also do not let the potatoes cook too long or they will disintegrate into your broth.  There’s no need to add flour or mashed potatoes to thicken this soup as the dumplings will do that for you.  I hope your family enjoys it as much as we have.

Simple Potato Soup and Dumplings

Ingredients

  1. 5 Pounds Potatoes – Peeled and cubed
  2. 1/2 Gallon Milk
  3. 2 teaspoons pepper
  4. 3 teaspoons salt
  5. 1 teaspoon celery seed

Instructions

  1. Place potatoes in a dutch oven, cover with water and boil until tender but still firm. Do not overcook them or they will become mushy and dissolve into the soup.
  2. Once potatoes are ready drain about half of the water off.
  3. Add pepper, salt, celery seed and milk and stir to mix.
  4. Heat until simmering but do not boil, making sure to frequently stir to keep from scorching.
  5. Add the dumplings (recipe below), cover and simmer for 10-15 minutes.

Dumplings

Ingredients

  1. 1 cup flour
  2. 2 teaspoons baking powder
  3. 1 teaspoon sugar
  4. 1/2 teaspoon salt
  5. 1 tablespoon butter
  6. 1/2 cup milk

Instructions

  1. Mix all dry ingredients together.
  2. Cut in butter until mixture is crumbly.
  3. Stir in milk until all ingredients are mixed well into a dough.
  4. Drop by spoonfuls into simmering soup, cover and cook for 10-15 minutes.
