It’s so easy to get into a rut when it comes to side dishes.  I know that all too often ours consist of a plain vegetable with some butter, salt and pepper.  Vegetables are great and I love them plain as much as I do dressed up but sometimes it’s nice to have something a little different.  Most of the time the meat is the star of the meal but a great way to save on your grocery budget is to make the veggies the star.  Dress them up a little and serve more veggies and a little less meat.  Your wallet will thank you! Part of the issue with putting more thought into the side dish is the time factor but with this dish you don’t have to worry about that.  This Stir Fried Ginger and Garlic Bok Choy can be on the table within 15 minutes and that includes prep!

Stir Fried Ginger and Garlic Bok Choy

Ingredients

  1. 1 tablespoon olive oil
  2. 4 cloves garlic – minced
  3. 2 tablespoon fresh ginger – minced
  4. 8 cups fresh bok choy – chopped
  5. 3 tablespoons soy sauce
  6. 1 teaspoon salt
  7. 2 teaspoons ground black pepper

Instructions

  1. Heat oil in a wok over medium/high heat.
  2. Add garlic and ginger to wok and cook until fragrant.
  3. Add soy sauce and bok choy and cook for 5 to 7 minutes. Bok Choy should still be crunchy and greens wilted.
  4. Season with salt and pepper.
