Stuffed Pepper Soup Recipe

I have really been craving soup a lot this past year.  It’s odd because soup was never one of my favorite foods.  It was just okay.. well other than homemade vegetable soup.  Hmm now that sounds delicious!  There’s another recipe I’ll have to share soon.  We enjoy going to Bob Evans and eating their all you can eat soup and salad.  But, as I mentioned last week we are really trying to cut back on eating out.

I’m a huge fan of stuffed peppers but it seems that I rarely get around to making them.  Joe and I had gone to dinner one night and on the buffet was this stuffed pepper soup.  I was instantly hooked.  So, we set out to create our own!  It’s so much simpler than making stuffed peppers and still has all of the flavor.  I hope your family enjoys it as much as we do.  If you make it please stop back and leave me a comment with your thoughts.  I’d also love to hear what your favorite homemade soups are.

Stuffed Pepper Soup

Ingredients
1 pound ground beef
4 bell peppers, chopped
29 ounces tomato sauce
29 ounces diced tomatoes
2 beef bouillon cubes
1/4 cup packed brown sugar
2 teaspoons salt
1 teaspoon ground black pepper
1 tablespoon soy sauce
2 cups cooked white rice

Directions
In a Dutch Oven brown ground beef over medium high heat and then drain off fat.  Add the chopped peppers to the browned meat and sauté for 3 to 5 minutes.  Reduce the heat to low. Stir in the tomato sauce, diced tomatoes (with juice), bouillon cubes, brown sugar, salt, pepper and soy sauce. Cover and simmer for 30 to 45 minutes.  Stir in the rice and heat through.

  1. I love hearty soups like this. I will put it on my to make list. My go to soups is always Loaded Potato Soup, Cream of Broccoli and cheddar soup. I really like minestrone but I have not made it before. I like soups and chili all year long, but I find it is really soul warming in the chilly months.
