Somewhere around October or November of last year I developed this crazy craving for Zuppa Toscana that just would not go away.  I was craving it every. single. day!  It didn’t matter how often we had it I wanted more.  So, I figured I better learn how to make it low-carb and at home.

It really didn’t take a lot of tweaking to transform it into something that was low-carb friendly.  The flavor is almost spot on to the Zuppa from Olive Garden.  It has a creamy but brothy liquid, the sausage gives it just the right amount of spice and the kale gives a little bit of texture and flavor that just takes it to the next level.  If you’ve never had Zuppa then you really need to try it to see why it’s so addicting.

Zuppa Toscana The Low-Carb Way



  1. 3 lb bratwurst - out of casing and crumbled - browned
  2. 3 oz. prosciutto, chopped small
  3. 6 garlic cloves, minced
  4. 8 cups kale, chopped
  5. 3 - 14.5 oz. cans chicken broth
  6. 3 quarts water
  7. 3 cups heavy whipping cream
  8. 2 T pepper
  9. 2 T salt
  10. 3 lbs. turnips, peeled & sliced
  11. 4 oz. fresh parmesan, shredded


  1. Cook prosciutto in a small skillet on medium heat until browned and then set aside.
  2. Chop or slice sausage into small pieces and then brown in a Dutch Oven or Soup Pot.
  3. Once sausage has browned add chicken broth and water to the pot and stir.
  4. Add sliced turnips and garlic to the pot and cook on medium heat until turnips are done. Be careful not to overcook as you don’t want them to be mushy.
  5. Add prosciutto and salt & pepper to the pot and simmer for ten minutes.
  6. Reduce heat to low, add kale and cream then continue cooking until heated through.
  7. Serve with grated fresh parmesan cheese.
