I love vegetables and I think I could almost be a vegetarian if my family were on board. I always watch for vegetables in season and love to try anything new that i come across. Right now asparagus is in season and it’s one of my favorites! Funny thing is it’s one of Robbie’s favorites too. I’ve mentioned before that he has odd tastes for a boy who is only ten! Of course he also says things like “shindig” as I mentioned previously! haha In some ways he’s well beyond his age. Back to the asparagus. When we went to Aldi’s this past week they had asparagus for around $1.20 a bunch. Great deal! I bought several bunches knowing if nothing else I’d just grill it as a side. But then I had some boneless chicken breasts that needed used and dinner needed cooked so I came up with this great crockpot meal, Asparagus Stuffed Chicken. It’s super simple to put together and tastes great!
Ingredients
- 4 Boneless Chicken Breasts
- 12 Stalks Asparagus
- 4 oz. Colby Cheese
- 4 oz. Cream Cheese
- 8 Carrots
- 1 Cup Water
Instructions
- Pound chicken breasts till they are about 1/2 inch thick.
- Shred Colby Cheese and mix with cream cheese.
- Clean asparagus and trim tough ends off.
- Divide the cheese mixture between the four chicken breasts - spreading evenly over the chicken.
- Put 3 stalks of asparagus on top of the cheese mixture in each chicken breast.
- Roll the chicken and secure with a toothpick or skewer.
- Clean the carrots and put in the bottom of the crockpot. This keeps your chicken from sticking and it makes a great side with the chicken.
- Pour 1 cup of water over the carrots.
- Arrange your stuffed chicken in the crockpot.
- Cook on low for 4-6 hours.
