Crockpot Wednesdays – Slow Cooker Lasagna

Lasagna is probably one of my favorite pasta dishes.  When I make lasagna in the oven I never pre cook the noodles so I knew that there had to be a way to cook it in the slow cooker.  I found a recipe on Pinterest and knew I had to try making my own!
Here is the inspiration for my lasagna although you’ll find they are really nothing alike beyond cheese and lasagna noodles; Creating through Life.  I’m not a big fan of hamburger and my family likes lasagna with pepperoni instead so that was one of the big changes I made.

This recipe turned out much better than I anticipated.  It really was delicious.  I hope you all like it as well. I used an oval slow cooker for this recipe but you could use a round one as well. 

 

Slow Cooker Lasagna
Ingredients
1 lb. box of lasagna noodles
12 oz. pepperoni
1 26 oz. jar of spaghetti sauce
1.5 cups water
16 oz. cottage cheese
4 cups mozzarella cheese
1 cup Romano cheese
cooking spray
Mix spaghetti sauce and water in a bowl and stir until mixed.  Spray the crockpot with the cooking spray to prevent sticking.  Put a light layer of spaghetti sauce on the bottom of the crockpot.  Place a layer of uncooked noodles in crockpot next – you will need to break some into pieces to fit them into the crockpot and ensure you have a solid layer.  Do not worry about this being perfect.  Next put a layer of each cheese and then pepperoni followed by about a cup of the spaghetti sauce mixture.  Continue layering until all ingredients are gone.  Make sure that you cover the top layer of noodles with a layer of sauce and mozzarella cheese.  Also note that any extra sauce you have can be used up on top as it will layer down into the lasagna and help to keep it moist and cook evenly.

*Note ~ You will notice I have a mix of yellow and white cheese on top of mine.  This is simply because I neglected to save back enough for the top.
Cook on low for 4 hours and serve.
