Crockpot Wednesdays–Slow Cooker Beef Fajitas

We have a Mexican restaurant in our town that has the best Beef Fajitas I’ve ever had.  Whenever we eat there I almost always have them no matter how many times I say I’m going to try something different.  They also have amazing Chile Rellenos.  Oh wow now I’m seriously craving Chile Rellenos.  Note to self to work on a recipe for those very soon!  Back to the fajitas! : )  Since we’ve been trying to eat at home more I haven’t had them for a while and making Fajitas at home seems to take forever for some reason. 

So, I set out to find a Fajita recipe that I could make at home and wouldn’t take an hour with prep and cook time.  I came across a Beer Beef Fajitas recipe on the Food Network website and knew it was something I could work with.

Beef Fajitas

It turned out delicious!  It has lots of flavor and is so simple.  The prep time was only ten minutes!  The rest of the time was spent letting the crockpot do it’s magic.

This recipe would be great with Spanish Rice and Refried Beans on the side.


2 pounds beef round steak
2 packets fajita seasoning mix
4 green bell peppers – sliced
1/2 cup beer *you can substitute water
1 pkg flour tortilla shells – 10 count


Cheese – any kind you prefer
Sour Cream
Hot Sauce
Avocado – Sliced

Rinse steaks with cold water, pat dry and then season on both sides with 1 packet of the Fajita Seasoning. Slice beef into strips and put into slow cooker.  Add peppers, remaining fajita seasoning and top off with the beer.

Cover and cook on low for 8 hours. Serve and enjoy!
